Al Hati is an Egyptian Grill restaurant in downtown Cairo and was very famous till the 1990s.
Ingredients:
- 1/2 kg minced meat
- 1 tablespoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon kofta spices
- 1 tablespoon cornstarch
- 1 large onion
- 1 tablespoon baking powder
How to Prepare
- Chop the onion and squeeze out all the water. Keep the onion water aside for later use when shaping the kofta. You can also add fresh tomato juice.
- Season the meat with salt, black pepper, kofta spices, baking powder, and cornstarch.
- Mix everything well until the mixture forms white threads.
- Let it rest in the refrigerator for half an hour.
- Shape the kofta by dipping your hands in the onion water, and form the kofta patties.
- Place the tray in a very hot oven at a high temperature until the kofta gets a nice color.
- Heat some charcoal, place it on a piece of foil in the middle of the kofta tray, add a spoon of oil, and cover the kofta well to absorb all the steam.
- You can also just use the charcoal, however make sure it’s not just lean meat, because the fat is what makes it taste good.
